There's a lot for me, especially if we were to count visual novels (which I won't), but the ones off the top of my head:
- Mass Effect trilogy (Especially 1 & 3)
- Dragon Age series (Though Origins is my firm favourite)
- TES: Oblivion & Skyrim
- Dark Souls/Demon Souls/Bloodborne
- Fallout (excluding Tactics and 76 which I haven't played)
- Megami Tensei & it's spin-offs (Shin Megami Tensei, Persona, Digital Devil Saga, Devil Survivor, etc...)
- The Witcher series
- Burnout Paradise

I've been playing a lot of Octopath Traveler lately as well, and I think it definitely has potential to become a favourite. Though I want to save judgment until I've beaten it.
